A Reminder and a Recipe

For those of you who have not yet sent me a recipe for my "Feed My Kids" contest, click here to read the rules. I've been trying all the recipes and will continue to do so until they are all tried -- but I'm not dropping any hints on who's ahead! Keep those recipes coming -- this is a lot of fun and the kids are taking their role as "judges" very seriously. Every time I put dinner on the table, they ask, "Is this for the contest?"

And, whilst wandering through cookbooks, I found a hit: Chicken Bacon Ranch Wraps. I tweaked it a little, but here's the jist:

1 chicken breast, baked
4 strips of bacon, cooked
lettuce
cheese (I use mozzerella)
Ranch dressing
White flour tortillas


Dice the chicken and the bacon. Mix together in a bowl with enough Ranch to moisten. Warm the tortillas in the microwave for thirty seconds, then lay a slice of cheese in the center. Top with chicken mixture, then with lettuce. Roll like a wrap ('cause it is one) and eat.

All four of my children loved this. It's a miracle!

(Thinking up titles is the hardest part of writing a book!)

This recipe sounds great. My kids love anything involving tortillas.

Can I leave one here? This one is easy and all in one pot. I call this Meatballs, Spaghetti and Broccoli.

Start with 2 cups of beef broth in a large pot. Add walnut-sized (tiny) meatballs made from 1 pound of ground beef, 2 tbs. cold water and 1 tsp salt. Cook for 10 minutes. Add 1 cup of uncooked spaghetti (I break in half). Cover and cook 10 minutes. Add 1 package frozen broccoli (I use chopped). Cover and cook 10 minutes. Pour into serving dish, sprinkle with Parmesan cheese.

I always use a really thin spaghetti, so I switch the spaghetti and the broccoli. I cook the broccoli for 5 minutes, then add the spaghetti for another 5 minutes. If you use a thicker spaghetti, you can add it before the broccoli. Adjust your cooking time if it starts to look too soft. I'll add more water if the spaghetti starts to stick. If I do that, I'll drain some of the broth out before I put it in the serving dish.

Here is another one. My sister served it to us last week and I was surprised that everyone loved it as much as they did.

Chicken Paprikas

2 Tbsp pork fat or fatback (or veg. oil)
1 (3 1/2 - 4 lb) chicken cut into 8 pieces
salt and pepper to taste
1 large white onion chopped
1 red bell pepper, stemmed, seeded, minced
1/2 fresh tomato, chopped
2-3 tsp paprika
1 1/2 tbsp all purpose flour
1 cup canned chicken broth
1 cup sour cream

Melt fat over med. heat. Add chicken pieces, sprinkle lightly with salt and pepper. Brown for about 5 minutes on each side. Remove chicken and reserve.

Add the onion and the bell pepper to the pot, lower the heat, saute until sift, about 5 minutes. Stir in the tomato and 2 tsp of paprika. Continue to cook for 5 minutes.

Add the flour to the pot, scraping and stirring well to combine and cook until the flour begins to turn golden. Add the chicken broth and stir very well. Add the chicken, cover and simmer, stirring occasionally and adding more chicken broth if necessary until the chicken falls off the bone.

Adjust the seasonings with additional salt, pepper and paprika to taste. Add the sour cream and stir well. Serve over egg noodles. Serve with a dollop of sour cream on top of each serving.

Here's one that everyone in my family likes. Amazing that we're 5 for 5 on this and it has spinach in it.

Turkey Spinach Meatloaf

10 oz pkg frozen chopped spinach, thawed
1 cup bread crumbs
1 onion, chopped
1 Tbs oil
2 eggs
1/4 c. milk
1 1/2 tsp. basil
2 tsp salt
1 tsp pepper
2 lbs. ground turkey
2 tsp lemon juice
1/2 c. ketchup
2 Tbs. butter

Cook onion in butter until soft. Whisk egss w/ milk, basil, S&P. Add spinach, onion, turkey, bread crumbs, lemon juice and MIX well.

Turn out and form loaf. Brush w/ ketchup and bake @ 350 for an hour.

Bon apetit!

We like it with potatoes, green veggie and cranberry.

The tortilla recipe reminds me of our version of KFC's twisters that we do.
Breaded chicken fingers baked and sliced into strips
grated cheddar/jack cheese
bacon-crumbled
shredded lettuce
sliced tomatoes
peppercorn ranch dressing

Spread the dressing on warmed tortilla, sprinkle cheese, add three strips chicken and top with other ingredients and roll tort, tucking in the ends.
Very simple and yummy too.

I hadn't thought about that, Karlene, but with everything my husband's allergic to, I did think about writing a book called "How to Cook For Someone Who Can't Eat Anything."
